When it comes into contact with air, roasted coffee loses up to 40% of its aroma in 8 hours. Since its inception, illy has used another extremely effective, patented and exclusive technology. An inert gas, nitrogen, is introduced under pressure into the illy cans. The flavours are thus trapped, fixed and preserved for a long time. Like a fine wine, coffee packaged in illy tins becomes more refined, fuller-bodied and lasts longer. Nitrogen is not an additive; it dissolves immediately when the can is opened.
