When it comes into contact with air, roasted coffee loses up to 40% of its aroma in 8 hours. To try to preserve them, vacuum packing is usually used, but it is ineffective. illy has used another extremely effective, patented and exclusive technology since its inception. An inert gas, nitrogen, is introduced under pressure into the illy cans. The flavours are thus trapped, fixed and preserved for a long time. Just like a good wine, the coffee in illy cans is refined, its roundness develops and it lasts longer. Nitrogen is not an additive, it dissolves immediately when the can is opened.
